BUTTERSCOTCH APPLE COOKIES

2 1/2 cups flour
2 tsp cinnamon
1 tsp baking soda
1/2 tsp salt
1 1/3 cups packed brown sugar
8 T butter
1 egg
2/3 cup apple juice
2 cups buttterscotch chips
3/4 cup grated apple
3/4 cup chopped walnuts
2 T butter
1 cup powdered sugar
Preheat the oven to 350 degrees and lightly grease baking sheets. Mix together the flour, cinnamon, baking soda and salt. Cream together the brown sugar and 1/2 cup of the butter. Beat in the egg. Add the flour mixture, alternately with the apple juice. Stir in 1 1/2 cups of the butterscotch chips. Drop by spoonsful onto the baking sheets. Bake 10-12 minutes or till lightly browned. Let stand 2 minutes and remove to cool on a rack. Melt together the rest of the chips, the butter. Stir in the powdered sugar and 1 1/2 T apple juice and frost the cookies. Sprinkle with the nuts. |
