BAKED POTATO SALAD
|
2 lb red potatoes
2 oz canola oil
2 tsp kosher salt
8 oz cooked bacon, diced
1 cup dairy sour cream
1 bunch scallions, chopped
8 oz sharp cheddar cheese, shredded
4 oz butter, cut into cubes
Toss the potatoes in the oil and salt. Place on a baking sheet and bake at 350 for 30-40 minutes or till tender. Cool and cut into large chunks. Add the rest and salt and pepper to taste and chill before serving. |
